Firecracker Casserole-simple and easy
Firecracker Casserole Recipe
TOTAL TIME: Prep: 15 min. Bake: 25 min.
MAKES: 8 servings
Ingredients
- 2 pounds ground beef
- 1 medium onion, chopped
- 1 can (15 ounces) black beans, rinsed and drained
- 1 to 2 tablespoons chili powder
- 2 to 3 teaspoons ground cumin
- 1/2 teaspoon salt
- 4 flour tortillas (6 inches)
- 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
- 1 can (10 ounces) diced tomatoes and green chilies, undrained
- 1 cup (4 ounces) shredded cheddar cheese
Directions
- In a large skillet, cook beef and onion until the meat is no longer pink; drain. Add the beans, chili powder, cumin and salt.
- Transfer to a greased 13-in. x 9-in. baking dish. Arrange tortillas over the top. Combine soup and tomatoes; pour over tortillas. Sprinkle with cheese.
- Bake, uncovered, at 350° for 25-30 minutes or until heated through. Yield: 8 servings.

Sally A. Louks, 76, of Croswell, MI, passed away June 1, 2015. She was born August 2, 1938 to the late Wilbur and Thelma (Livingston) McGregor in St. Clair, MI. She owned Flowers by Sally flower shop in Port Huron, MI. Sally is survived by her husband, Donald H. Louks; two sons, Gary R. (Julie) and Gregory H. Louks; a sister, June Rosell; 6 grandchildren, Nathan Louks, Nichole Favors, Michelle, Brandon, Sierra and Austin Louks; and great grandchildren, Parker and Dean Louks and Noelle Favors. There will be no calling or services.

This was our SENIORS prom at our Memorial Day campout with the Swing-N-Travelers. YES, I was able to get into my junior prom dress. I could hardly walk, I walked like a Chinese lady. HA HA We all got individual pictures and then one of the whole group. (minus Barb Perkins, and Carl and Rita Schneider)
We were voted Prom King and Queen for 2015.
