This blogs sole purpose has transitioned to one of keeping in touch with each other. Over the years it has been primarily for letting everyone know what is happening and also for promotion to add more folks to our Winter Texan family. The core of things has changed and we must change along with it. We still want to know what is happening with our friends no matter where they may be located. Rio Grande Valley ToDo List
I am going to need some help with this list. We have friends coming in February and we need a somewhat thorough list of things to do. I thought I had one all made up but I cannot seem to lay my fingers on it. I am going to start it and be as complete as I can be so help me add to it please. And you folks who are no longer coming down please send me an email to tell me what you most miss about the Rio Grande Valley. In no particular order...
1. South Padre Island
a. Beach walk
b. Dirty Al's
c. Pirate's Landing
d. Kite Festival (January 31st, 2009)
e. Port Isabel- The Shrimp boats is a comin'
2. Basilica at San Juan

Even if you are not Catholic this is worth a stop.
3. Nuevo Progreso, Mexico
Everyone has a favorite place to eat/shop so go on down and develop your own favorites.
4. Pepe's on the River- A thatched roof bar right on the Rio Grande River. Great Food and Music. A fun place to gather with friends. Located south of Mission TX
5. Ropa Usada- means used clothing in Spanish and there are several places south on 23rd street out of McAllen where bargain hunters load up with used items for pennies a pound. An experience not to be missed.
6. Los Ebanos hand-pulled Ferry. This is not a highly touted tourist attraction. You can ride the ferry across the Rio Grande by car, bicycle or on foot and then it is about a mile to the first little Mexican village. They do not cater to all the fanciful things you will find in Nuevo Progreso. They are friendly but it is Mexico at a more primitive level. English is not spoken by many. It is a whole other country.
7. Golf at several different courses all of them a bargain compared to other parts of the country.
8. Park Activities- We cannot overlook our own backyard. Our own Magnolia Park Association schedules a mulitude of things to do sometimes making it difficult to find time for the other things on this list. $2.00 dues per person per season. The very best of bargains!
9. Santa Ana National Park- Your Golden Age Pass will get you into the park to spend several hours enjoying nature.
10. Bentsen-Rio Grande Valley State Park
See Javelina and every bird known to the Rio Grande Valley.
11. The original Iwo Jima Memorial in Harlingen TX

Cattleman's Beef & Beans
Norma C. sent me an email filled with Crockpot Recipes and I picked out the one featured here and it will be on my "do again" list. I followed the recipe to the letter and it is scrumptious! My only suggestion would be to start it in the evening and cook it all night unless you get up pre-dawn and start it then. It takes a very long time but it is so worth it.
Recipe: Cattleman's Beef and Beans 12/12/2008
1 lb. dried pinto beans
6 c. water
3 lbs. beef brisket or round roast
1 lg. onion, chopped
½ c. dark molasses
2 tsp. salt
½ tsp. ground ginger
½ tsp. dry mustard
¼ tsp. pepper
1 bay leaf
1. Rinse beans under running water, place in a large kettle with water; bring to
boiling; cover kettle; lower heat; cook 15 minutes; let stand 1 hours.
2. Trim all excess fat from beef; brown meat on all sides in remaining fat in a
large skillet.
3. Place meat in the bottom of the slow cooker; add beans and liquid, onion,
molasses, salt, ginger, mustard, pepper and bay leaf. Add more water, if needed
to cover meat and beans; cover.
4. Cook on high for 2 hours, stir beans, adding more liquid if needed to keep
beans and meat covered.
5. Turn heat control to low and cook for 8 hours, or until beans are very tender
and liquid is absorbed. Taste and season with a spoonful of hot prepared mustard,
if you wish.
6. Remove meat to a carving board and cut into slices; spoon beans around beef
on platter.

An RV Tip
Many RV's with slide outs have a decorative board on them. The ledge it creates is hardly wide enough to be of any use and anything placed there must be stored while moving. Friend Sharon B. in north Texas uses the space to display family photos and I thought it to be an excellent idea. She buys the inexpensive
( a dollar or less)clear plastic frames and turns them upside down to hang on the ledge. Also easy to take down and store while in transit. Great idea Sharon!!
Grape Salad
From friend Shirley F. who has a place in Split Rail RV Park in Mission:I made this for Thanksgiving and it was a big hit. It makes a big recipe. You could cut the dressing in half.
Grape Salad
1 8oz pkg cream cheese.
1 8oz sour cream
3/4 c brown sugar
1/2 c powdered sugar
1T vanilla
1T milk
1tsp almond flavoring
Blend ingredients together.
Fold in 1-2 pounds of grapes (green and red)
I add a chopped apple.
Sprinkle chopped walnuts over the top. Chill

Bernie's Fruitcake
Bernie was a neighbor of ours when we lived on Lake Panorama. One Christmas season I told Bernie I didn't like fruitcake. Bernie said, "I'll bet you like MY fruitcake." And was he right!! The best fruitcake I ever tasted. I asked Bernie for the recipe and every year he put me off saying he would make it for me and he did. Finally Bernie did give me the recipe and I am very glad he did. Bernie has passed on now but his fruitcake will live on forever in my heart if not on my plate.
Recipe: Bernie's Fruitcake 12/1/2008

2 C Flour
1 1/2 C Sugar
1 tsp Baking Powder
1/2 tsp Salt
4 eggs
3 T butter-room temp.
4 Jars Whole Maraschino Cherries (Drain 3 jars)
2 C Pecan halves or pieces
2 C Walnut halves or pieces
1 LB. Raisins
Sift together flour, sugar, baking powder and salt. Stir in eggs, one at a time. Add
remaining ingredients one at a time in the order listed, mix gently.
Pour in ungreased tube pan. Bake at 300 degrees for 1 hour and 45 minutes.
Increase heat to 325 degrees and bake an additional 15 minutes. Let cool in pan
then remove. Wrap in foil or plastic and store in refrigerator. Allow 1 to 2 days for flavors to mingle before serving.
I never liked fruitcake until I tasted Bernies. :-)
