Dave and Jim are busy cutting up the hog Jim shot! Now the work begins--hams will be smoked by Bob, liver will be dehydrated for "doggie treats", chops cut and frozen, loose meat frozen for sausage making at home, and the rest canned. It was a nice hog, very little fat. I think the wild pigs run constantly and are "lean and mean". Jim said the hog had tusks on top and bottom; he hopes to get the head when it is cleaned.
We are one of the oldest parks in the valley and within walking distance of the famous Don-Wes Flea Market. Along with being one of the oldest we also have the wonderful reputation for being a friendly and active park. We have an association of members who give generously of their time in a myriad of ways to make coming to the Rio Grande Valley each winter a whole bunch of fun for everyone. So come on down and have fun with us!!!
